Healthy Horse Show Snacks: No Bake Energy Bites

Spoiler alert: this is not a food or cooking blog. I wish I had the skill set for that! Instead, my m.o. is more along the lines of finding recipes – preferably super simple recipes – that I like and then proceeding to make them on repeat for an extended period of time. This is one of those super easy recipes that has become my favorite on-the-go, horse show snack!

One of the great ladies that I get to work with at the Capital Challenge Horse Show (if you’re reading this: hi, Michelle! 😉 ) introduced me to this recipe, and I was hooked! (As in, I probably consumed 5-10 of these a day while at Capital Challenge.)

I made a batch before I left for the Winter Equestrian Festival (WEF), and I’m making another batch tonight!

Here’s the easy recipe to try!:

Ingredients:

  • 1 cup oats
  • 2/3 cup coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup chocolate chips
  • 1/3 cup honey
  • 1 tbsp. chia seeds
  • 1 tsp. vanilla extract

Directions:
I feel a bit dumb even listing directions for these, because they are so simple!
1. Combine all of the ingredients in a large bowl and mix well!

2. Once you’ve mixed everything together, put it in the fridge to chill for 20 to 30 minutes.

(Side note: love the sweater I’m wearing in these pics, and it’s currently under $40!)

Step 2b. Avoid letting dog eat the mix.

3. Roll the cooled mixture into one-inch balls, and enjoy!! 😀 SO simple!

This should make about 20 energy bites. Mine usually makes about 15 because I eat five just in the process of making them…
